Recipe: Oat flake cookies

Other day I remembered my childhood recipe - Oat flake cookies and I decided it is time to make them once more. the best thing of this recipe is that there is no flour and it is really easy and fast to make. check this out:
you will need:
  • 3 glasses of oat flakes (I use the big flakes) - it is approx. 500gr
  • 3 eggs
  • 250gr butter
  • 200 gr sugar (if want less sweet use just 100gr)
  • 1 d.spoon of vanilla powder or few drops of the concentrate for smell
  • a peel of lemon (can do without too, but makes additional flavor
  • (100gr raisins or almonds (whatever you prefer or nothing)
Preparation:
1. melt half of the butter (125gr) on the frying pan (better big one)and once that done put on it oat flakes and burn them slightly: (

once ready take them off the pan and put them in a bowl to let them cool down.
2. Then separate the egg white's and whip them until you can lift the whisk.

3. mix together the rest of the butter (cut it n the small pieces before) with sugar, oat flakes and yolks, (also vanilla, lemon peel and raisins/almonds/hazelnuts/coco - whatever you prefer. yes, even chocolate)
4.  carefully fold in the egg whites together with the rest of the mass
5. take the dessert spoon and make measure the size of the cookies and put them on the baking pan I usually put under the baking paper so it is easier to get it off afterwards
(as it was a Valentine's day than use the heart-shaped cooky form to get the shape.

6. put in on already heated oven (200C') and bake till it is ready, usually takes some 10-12min.
and it is ready! :) (this was my 1st pan (out of 4) so the hearts came in 2nd round and were looking a lot prettier too, hehe. but taste is what matters, right? :)).
Note! :) make sure you don't overcook otherwise it will become really hard, but still good.
 Note nr.2:) keep in a box with lid so remain slightly soft :)
Note nr.3 :) perfect with Milk and afternoon tea or at breakfast
